Because we are able to follow the seasons and harvest urchins from NSW through to Southern Victoria and Tasmania means a constant supply(weather permitting) of fresh Kina is available for you to enjoy year round.
The size and colour of the roe will vary depending on the species and season.
Purple Urchins (Centrostephanus Rodgersii) which produce larger pieces of roe and bright yellow in colour are at their best from November to June.
The smaller but just as tasty are the White Urchin (Heliocidaris erythrogramma) available from August to November.
Kept refrigerated, Kina has a shelf life of 14 days from process.
